Environmental engineers may spend a lot of time in the field. However, they work with things such as designing wastewater treatment plants. Environmentalists can go out in the field whenever they please. Nobody will pay them to do so, however. "Environmentalist" describes a political philosophy, not a profession.
If you are looking for a profession that will have you out in the boonies as much as possible, consider becoming an ecologist, wildlife bioloogist, or fishery biologist. You will definitely need a bachelor’s degree, preferably a master’s or a doctorate. You won’t spend all your time in the field; there is a great deal of paperwork and lots of meetings. You also won’t be able to pick and choose when you go out. You may be out in heavy rain, blizzards, or scorching heat. You will get frustrated by the refusal of the animals you want to enter your traps and the refusal of people with no education in biology to believe what you tell them. I like the life. You might, too.
